A Low Cholesterol Recipe From Chef Mardav
If the words "low cholesterol diet" fill you with dread and make you think of tasteless, dull dishes, try this no-cholesterol recipe from the kitchen of Chef Mardav. If you don't find this zero-cholesterol vegetable delight full of flavor, there may be something wrong with your taste buds.
The zesty sweet-and-sour taste will dress up any meal and the dish can be used as a base for low-cholesterol chicken or fish entrees. Chef Mardav sometimes serves it with strips of skinless chicken breast steamed in tea and ginger.
Chef Mardav's Ginger-Vinegar Cabbage
- 1/2head cabbage
- 1/2cup water
- 1/8 cup apple cider vinegar
- 1.5 oz fresh ginger root (piece about 2 inches long)
- 4 cloves of garlic
- 2 tablespoons olive oil
- 1 tablespoon dark sesame oil
You'll need a wok and a wooden spoon for this low-cholesterol recipe. Remember that freshness counts with all the ingredients. A successful low-cholesterol recipe depends upon low-cholesterol ingredient selection. - Cut the cabbage into 1-inch strips.
- Cut the ginger into paper-thin slices
- Chop the garlic into small slivers
- Heat the wok and add the olive oil. When the oil reaches sizzle temperature, add the ginger and garlic.
- Wok-fry the ginger and garlic until they start to turn golden brown.
- Add the sesame oil.
- Add the cabbage right after adding the sesame oil.
Stir constantly after adding the cabbage. Stir fry until about half the cabbage starts getting translucent. Stir carefully (there will be lots of oil splashes). - Add the water and continue stirring carefully.
Cover the wok and cook on very low flame for 4 to 5 minutes.
